The flavours, colours and textures of honey... These characteristics are closely related to the terroir, and the trees and flowers that grow there and are visited by the bees. As early as the end of the eighteenth century, Gâtinais honeys were renowned for their quality. In the nineteenth century, they were the most consumed honeys in Paris, due to the fact that they were produced nearby and because of their fine taste. They had a light colour and a particular flavour given to them by sainfoin, a plant grown for fodder, which has become rare today. Today, beekeepers produce a polyfloral honey, with a creaminess, sweetness and fine texture that ensure its reputation endures. Because the best guarantee of finding good honey is to buy it directly from beekeepers, we have listed a few addresses below.
